RECIPE:  HERB-RUBBED SALMON

This recipe is great for weeknights when you need to get something quickly on the table.  

Easy Herb-Rubbed Cod Fillets

PREP TIME:  5 min

COOK TIME:  20 min

SERVES:   4

INGREDIENTS
FOR THE SALMON
  • 4 salmon filets

  • salt & pepper to season

  • 1 sachet TASTE OF TUSCANY spice blend

  • 2-3 tsp (10-15 ml) honey (to taste)

  • 3 TBSP (45 ml) olive oil for the rub

  • Squeeze of lemon (1 wedge/ roughly 2-3 tsp)

COOKING INSTRUCTIONS

Preheat oven to 350 F (180 C)

1)  Season the salmon with salt and pepper on both sides

 

2)  Mix olive oil, honey, and TASTE OF TUSCANY spice blend in a small bowl to form a rough paste.  Divide the herb mixture evenly across the top side of each piece of salmon and rub into the fish with the back of a spoon.

 

3). Squeeze a bit of fresh lemon juice over the salmon (1 one lemon wedge is enough), transfer to your preheated oven.

 

4)  Cook for 15 minutes.

 

5)  Switch the oven's heat source to broil (top-down grill for the Europeans) and cook another 5 minutes, or until top has browned and the white protein starts to bubble and leak out the sides.

SERVE

Place backing dish directly on the table (with a hot pad underneath) or transfer to individual plates and spoon a bit of the pan juices over each piece.

INGREDIENTS

If you don’t have fresh lemons to hand, a splash of white wine also works.

COOKING TIME

 

Cook time will vary according to the thickness of fish - so it helps if you can buy 4 pieces with the same thickness.

If you're in a hurry, you can also pan-sear the salmon, about 4-5 min per side.

I prefer the oven as it keep my stove-top clean, and my kitchen smelling fresh.  :-)
